Raisin standards

The Institute of Standards & Industrial Research of Iran requires that all raisin producers must observe the following standards in order to export their product:


• Maximum occurrence of gravel or sand: 1 piece per 10kg

• Maximum moisture content: 16%

• Maximum nitrate sulfur (for golden): 2/1000

• Maximum unclean raisins: 5%

• Maximum verminous raisins: 3%

• Maximum other kinds and forms: 1%

• Maximum raisins with stems: 10%

• Maximum length of bunches: 5cm/1kg

• Maximum crushed or damaged raisins: 5%

• Maximum unripe raisins: 2.5% to 5%

• Maximum sugared raisins: 15%


Note: These conditions differ slightly for green raisins.

Raisins are also divided into three sizes according the number of raisins per 100 gr.

Raisin Sun dried natural seedless
Parent grape Thompson seedless
Process Dried under the sun. No chemical treatment used. 
Description Seedless; dark brown color; average size.
Availability 93% of the total raisin crop. Found in all food stores all year around.
Uses The most popular raisin for cooking, baking, salads, desserts, and eating out of hand.

 

Raisin Golden Seedless or Goldens
Parent grape Thompson seedless
Process Mechanically dehydrated. Specially treated with sulfur dioxide to preserve the golden color.
Description Seedless; golden- amber color; average size
Availability 5% of the total raisin crop. Available in most food stores, especially in the fall and winter.
Uses Used wherever a light colored raisin is desirable. Popular for fruit cakes and confections.

 

Raisin Dipped Seedless
Parent grape Thompson seedless
Process Sun ripened. Bathed in hot water and mechanically dehydrated. No chemical treatment used.
Description Seedless; light brown color
Availability Limited availability. Found in large food stores.
Uses Used in cooking, baking, salads, desserts, and for eating out of hand.

 

Raisin Seeded or "Puffed" Muscat
Parent grape Muscat
Process Dried under the sun. No chemical treatment used. Seeds removed mechanically during processing.
Description Large, dark and extra sweet. Distinctive fruity flavor; seeds removed
Availability Limited availability. Found in food stores, especially in the fall and winter
Uses Prized for baking, especially in fruit cakes.

 

Raisin Zante Currants or Currants
Parent grape Black Corinith
Process Dried under the sun. No chemical treatment used.
Description Seedless; mini-raisin, 1/4 average size. Very dark color; tart, tangy flavor.
Availability Limited availability. Found in large food stores.
Uses Popular for baking; traditional in hot cross buns

Parent grape Black Corinith
Process Dried under the sun. No chemical treatment used.
Description Large, dark red and extra sweet. Distinctive fruity flavor.

Sultanas are grapes which have been dried. Sultanas are free of fat and cholesterol and are very low in sodium.

Seedless Sultana Raisin: Sultana raisin is seedless, light, and dark brown in color.
Seedless Golden Raisins: Golden raisin is golden yellow to yellow-amber in color.
It is Thompson seedless raisins which oven-dried to avoid the darkening effect of sunlight, and treated with sulfur dioxide to preserve the light color.
Seedless Sun dried Raisins: This raisin is seedless and dark black in color and produces in a perfect natural condition.
Seeded Sun dried raisin: It is seeded raisin and dark brown in color and big in size.
It produces in a perfect natural condition.

Although many factors affect the development of cancer, heart disease, and high blood pressure, eating a diet low in fat and sodium and rich in fruits and vegetables, including sultanas, may reduce the risk of these diseases.
