Saffron is the golden stigma of the purple fall crocus and is the world's most expensive spice. The value of this spice is derived from the fact that it is such a labor-intensive crop. Only five to seven pounds of saffron can be produced from each acre of land. The flavor of saffron, however, is very concentrated. Preparation and Storage
Because of its expense, intense flavour, and strong dying properties, very little saffron is required for culinary purposes and the key is to distribute it evenly throughout the dish being prepared. It can be crushed to a fine powder in a mortar and pestle. It is easier however, to steep the saffron in hot water— a pinch to a cup will create the desired flavour and colour. Good saffron should expand on contact with the water and a cup should be sufficient for 0.5 kg (1 lb) of rice. Powdered saffron is added directly to the required ingredients of a dish, though we recommend against buying saffron powdered, as it is so frequently adulterated. Store in a cool dry place, out of the light.

Kashmir "Mogra Cream" Indian Saffron is the world's finest saffron. The dark red color and long perfect strands are as beautiful as they are colorful and flavorful. Kashmir saffron is awfully tough to obtain, which makes it higher in price, but Kashmir Mogra Cream Saffron is truly wonderful.
Spanish Coupé Saffron is the top grade of the Spanish Saffron crop. Extra hand labor is used to remove every bit of the yellow saffron style material, leaving 100% beautiful pure red saffron threads -hence the name: coupé means "to cut", as in cutting off all the yellow bits. Spanish Coupé Saffron is a truly excellent crop, especially nice for the traditional Spanish dishes.
Spanish Superior Saffron is the most widely available saffron and is a very good crop. Spanish Superior Saffron has a bit of the yellow style material left attached to some of the saffron stigmas (see photo), so it is not quite as strong as Spanish Coupé or Kashmir Indian Saffron.

Pure Spanish Saffron in Threads - Besides the paella pan and the rice, there is only one other required ingredient for authentic paella: saffron. We sell saffron in threads rather than in powder form because it is difficult, if not impossible, to assess the quality of saffron powder. (Powder may have been blended with inferior quality saffron or adulterated with non-saffron products.) Saffron in threads stays potent for up to three years when stored in a cool, dark, dry place.

Why is genuine "Mancha" Spanish saffron so precious? The saffron flower must be hand picked at dawn on any of the 15 to 20 days in which it is in bloom mostly during end-October. The flowers are collected in baskets, and transported to the villages where the precious stigmas are removed by hand. To give an idea of the laborious nature of this work we can say that from 160,000 saffron flowers, approximately, 5.25 Kg of stigmas are obtained which, once dried, produce only 1 Kg. of saffron. Due to it's properties, "Mancha" saffron is beneficial to health, and used in many recipes. Spanish "Mancha" saffron is the best in the world, owing to higher levels of aromatic & flavouring oils. Spanish saffron’s red-filament are the longest. The charecteristics of genuine Spanish Mancha saffron is that the stigma's must be joint in the three's at the end of a portion of the style, which is yellow in colour.The stigma's must be longer than the styles and their colour vibrant - red, never dark red.
